Delivery fees, minimum spend and estimated delivery times are set per zone, not per brand. The same menu item can cost and take different amounts depending on your suburb. This page uses the published Melbourne figures as concrete examples and explains what changes when you order late.
How a zone is defined
Three numbers per zone, set by the store that serves it
A zone groups suburbs around a serving store and publishes three figures: an estimated delivery time, a minimum spend and a delivery fee. The Bayside zone on the Melbourne delivery page is a clear case. It pulls Mordialloc, Highett and Moorabbin into one area served by the Mentone store, with an estimated 35 to 50 minutes, a $20 minimum and a $4.99 fee.
The zone exists to give orderers a realistic expectation rather than a national average. A single figure applied across every suburb would hide the difference between a short dense run and a longer route further out, which is exactly what decides your wait and your fee.

Why fees and minimums move with distance
Neither figure is a penalty
A delivery fee covers the cost of the run, and a minimum spend protects the store from fulfilling small orders at a loss over a long route. That is why the two numbers tend to rise together as the zone widens. A $4.99 fee on a $20 minimum is a short, dense run; a $6.99 fee on a $25 minimum is a longer one.
Neither figure is negotiable at checkout. The fee is added to your total at the confirmation step, and the minimum is checked against your basket before the order is accepted. If your basket falls below the minimum, the app prompts you to add items rather than charging the difference.
How the two numbers compare
Estimated delivery time and what it includes
The estimate covers the whole cycle from kitchen to door: preparation, handover to the driver, and the trip itself. It is a range rather than a promise, which is why 35 to 50 minutes is more honest than a single number.
Peak hours, weather and driver availability push you toward the top of the range. A quiet mid-afternoon order can land closer to the floor. Treat the upper figure as the number to plan around.
Late-night trade
Check the store, not the brand
GYG does not run one national closing time. Selected locations operate very long hours, including late-night trade and some early-morning openings, while others close with the working day. Check the individual store page for that outlet's hours.
Australia Square in the Sydney CBD, for example, trades weekdays only and is closed on weekends. Expect delivery availability to end with the kitchen — if the kitchen has closed for the night, no courier will be dispatched, regardless of what the app's zone map still shows as covered.

Ordering across a zone boundary

Suburbs near a boundary can sometimes be served by more than one store, and which one takes the order affects your fee and wait. If your address sits at the edge of a standard zone, it may fall into the extended zone on a different store's map. That is the single biggest reason two neighbours can see different figures.
Enter your full address before building the order, so the zone the app applies is the one that actually covers your street. Adding items first and entering the address at checkout can produce a different fee than the one you were planning around.
Minimum spend and how it works in practice
It is the food you receive, not a fee
A minimum spend is the order value required before delivery is offered at all. It is not a fee and it is not lost; it is the food you receive. If your basket falls short, adding a side or an extra salsa is usually cheaper than switching to pickup, but not always.
On a $25 minimum with a $6.99 fee, a small basket plus pickup can come in below the delivered total. Run both numbers before you decide.
Reading the numbers without over-reading them
Use them to choose a format, not to predict a precise minute
A 45 to 60 minute estimate does not mean the food arrives cold, and a 35 minute estimate does not guarantee it arrives hot. The figures describe distance and load, and the actual result depends on the specific run.
What the numbers reliably tell you is how far the kitchen is and what the convenience costs. Order items that suit the range — burritos and bowls hold their temperature well on a 50-minute run; nachos and loaded fries are better picked up or ordered inside a shorter zone.
Sometimes the zone answers the question for you. If the estimate sits at the top of an extended zone and you want tacos or nachos, pickup or dine-in will beat delivery on every measure that matters.
If the minimum spend pushes your basket well past what you wanted to order, pickup removes both the minimum and the fee. Delivery is a service with a published price. It is fine to look at that price and decide against it.
